Description
Whisson Lake is the highest commercial vineyard in South Australia, located in the Adelaide Hills, on the extreme slope of Mount Carey within the Piccadilly Valley.
The Whisson Lake vineyard has been using organic practices for many, many years. Our spray program has always been based on sulphur (and tiny bit of copper), the fertiliser program on fish, seaweed and manures for decades, and we stopped spraying under-vine herbicides in 2015.
The Wines
Their wine is made with traditional Burgundian methods. Small open fermenters, wild ferments, unfiltered, no fining, just a small amount of sulphur added just before bottling (30ppm sulphur only).
